i always want to make gazpacho for our annual party, but it’s not that convenient to eat. plus, i’d like to try to shy away from wasting plastic utensils this year, if we can help it.
i’ve found some cream cheese roll-ups; i usually make vegan pumpkin cheesecake and grilled eggplant. i’ll probably make some tomato, basil, mozzarella skewers. i usually make a vegan noodle salad with bell peppers and green onions, but i think i want to try this edamame salad with wasabi dressing. if my oven was working (i’ve asked kurt to call hirsch no less than 10 times in a week), i’d like to make little baby quiches.
or some gougères!
also, according to the weather channel, it’s supposed to be 71 and no rain next saturday, yay!
